Stuffing egg muffins
prep time: five minutes'total time: thirty minutes

1 pkg. (120 g.) of Stuffing Mix (recipe calls for Stove Top, but I don't think it matters)
8 eggs
1/4 shredded cheddar soy cheese (or equivalent)

Preheat oven to 400F. Prepare stuffing mix as directed on package. Press 1/4 cup of stuffing firmly onto bottom and up sides of 8 muffin cups, forming about 1/4-inch rim around top of cup.

Crack one egg into each stuffing cup, sprinkle with cheese.

Bake 20 minutes or until yolks are set. Let stand 5 minutes before serving.

Makes 4 servings (two each)

What I really like about this recipe is that you can add anything you want to the "muffins", when you are sprinkling on the cheese! If you have some cooked chicken left over, why not?
