Something different...orange rice pudding

Orange rice pudding
50g/2oz/0.25cup short grain pudding rice 600ml/1 pint/2.5 cups soy milk (add more if gets too dry) finely grated rind of half a small orange 3 tbs clear honey about half cup vanilla yogurt (optional) finely chopped pistachio nuts toasted (optional) to serve
Mix rice with milk and orange rind in a saucepan, pour in the honey and stir well.
Bring to the boil, lower heat, cover and simmer gently fopr about 1 hour 15 mins, stirring frequently
Remove lid and continue cooking (15-20 mins) till rice is creamy.
Add (optional yogurt), spoon rice into bowls and sprinkle pistachios on top.
I also have recipes for squid risotto with chilli and coriander and salmon risotto with cucumber and taragon if anyone is interested in a seafood alternative....I did mention this cook book has about 30 risotto recipes didn't I??

PS thanks for all your recipes, I'm going to get stuck into it soon as I have some time...although I have seemed to miss where the chocolate, cheesecake brownie recipe is??? Have to try that if anyone can point me in the right direction, it sounds luscious.
