Just saw the other post and thought of this recipe, flavored up by using oat flour. I modified this from the "Neiman Marcus" cookie recipe that was going around over email a few years ago. I seem to do OK with using regular chocolate chips, but if you're a carob fan, I'm sure those would work too. Very yummy!
1 cup canola margarine (I use the soft kind in the tub) 1 cup brown sugar 1 cup sugar 2 eggs (use egg replacer) 1 teaspoons vanilla 2 cups flour 1 teaspoons baking soda 1 teaspoons baking powder 2 1/2 cups blended oatmeal (measure 2 1/2 cups oatmeal and blend in blender to a fine powder OR use 1 1/4 cups oat flour, available at Whole Foods or HFS) 1/2 teaspoon salt 1 cup semi-sweet chocolate chips 1/3 cup milk chocolate chips
Cream the margarine and both sugars. Add eggs and vanilla. Mix together flour, oatmeal, salt, baking powder, and baking soda. Add chocolate chips. Roll into balls and place two inches apart on a cookie sheet. Bake for 9-10 minutes at 375º, just till tops are no longer shiny.
