This is not really a recipe but well I guess it is but a very easy one.
Take 4 mahi mahi fillets (I get the frozen bags at Sam's Club) and dip in 1T. Chef Paul Prudhomme's redfish magic and place in a very hot cast irom pan with a little oil. Turn on a fan. Cook on high heat for about 4-5 minutes per side. Make sure it is good and dark before turning. Serve with mango salsa if possible or some other prepared sauce. It is a really delicious way to make fish!

IBS-A for 20 years with terrible bloating and gas. On the diet since April 2004. Remember this from Heather's information pages:
"You absolutely must eat insoluble fiber foods, and as much as safely possible, but within the IBS dietary guidelines. Treat insoluble fiber foods with suitable caution, and you'll be able to enjoy a wide variety of them, in very healthy quantities, without problem." Please eat IF foods!
