I was home sick today and threw this together for dinner. It's is almost too easy to call a recipe, but it really hit the spot, so I thought I'd share.
The Easiest Chicken Veggie Soup Ever
1 quart box chicken broth (no MSG) 2 large carrots, thinly sliced 1 1/2 large potatoes, chopped About 2 cups cubed, cooked chicken (I used one package of Louis Rich to make this even easier) Salt and pepper, to taste
Dump the broth, carrot slices, and potatoes into a medium saucepan. Bring to a boil; reduce heat and simmer for 10-15 minutes or until the veggies are very tender. Stir in the chicken, reduce the heat even more, and let it go a few more minutes to heat the chicken through. Sprinkle in some salt and pepper to taste. Voila!
