Re: Ideas for ripe bananas.       07/22/03 10:52 AM Edit Reply Quote Kandee Reged: 05/22/03 Posts: 3206 Loc: USA, Southern California From the back of a jar of Grandma's molasses and on their web site: www.grandmasmolasses.com Grandma's Banana Bread Yield: one loaf 4 Tbsp. butter, softened (I'd use apple butter or apple sauce to replace the butter) 3/4 cup Grandma's Molasses 1/4 cup sugar 11/4 cup flour 1/2 tsp. salt 1/2 tsp. baking soda 2 eggs (I'd use 3 egg whites, or an egg replacement product) 3 large ripe bananas, mashed 1/2 cup each chopped nuts and chocolate chips (optional) 1/2 tsp. each fine orange zest and nutmeg (optional) Heat oven to 350ºF. Cream butter, molasses and sugar. Whisk together flour, salt and baking soda. Combine with butter mixture until consistency resembles brown sugar. Beat in eggs. Fold in remaining ingredients.
