Cheesy Rice Cake Nachos - Weight Watchers Recipe

You can make this safe with the right substitutions and leave something out if you don't think you can tolerate it. And some people said they can handle refried beans so maybe you could add that???


24 items Quaker Oats Quakes Crispy Mini's Rice Snacks
2/3 cup salsa, medium or hot, well-drained
3 Tbsp canned jalapeno peppers, chopped, or to taste
1/2 cup low-fat shredded cheddar cheese Use a safe kind like Veggie Shreds
1/4 cup guacamole not sure about this - maybe just leave it off since it won't matter much
3 Tbsp reduced-fat sour cream use an IBS safe kind like "Better than Sour Cream"


Preheat oven or toaster oven to 400F. Arrange rice cakes close together on a baking sheet.

Spoon well-drained salsa over rice cakes. Sprinkle with jalapeno and cheese.

Bake until cheese is melted and nachos are heated through, about 10 minutes. Spoon guacamole and sour cream over nachos. Serve warm. Yields 6 nachos per serving.
