Regular corn syrup is safe. I still wouldn't go eating a ton of it, as it is a sugar, but fructose is a GI tract irritant, as I understand it, and so high-fructose corn syrup would be an irritant as well. Although, I have to admit that I'm ok with it in small doses... still, studies have pointed to HFCS as a major cause of obesity, so it's best to avoid it if at all possible.
Eggbeaters are basically egg whites, colored. If you can handle egg whites, you should be fine with Eggbeaters.
