These are great! Made them today. I actually made them with some frozen bananas from my freezer... must have made the muffins sweeter than normal. I used no sugar or oil!!! An IBS sufferer dream!! Enjoy
1 cup whole wheat flour (I used 1/2 white) 1 cup wheat bran (i used oat bran) 1 Tbsp baking powder 1/4 tsp salt 3-4 VERY ripe bananas (frozen bananas) soy milk equivalent of 1 egg (possibly a few Tbsp of sugar or honey if bananas are not sweet enough- the riper the bananas, the sweeter they are - adjust to your taste!)
Mix dry ingredients. Mash bananas and add enough milk to make 1.5 cups total. Add egg to bananas. Pour wet over dry ingredients and stir just until mixed. Spoon into 12 lightly greased/pammed muffin cups. Bake at 400 degrees for 20 minutes. Remove from cups while still hot.
