1½ c Egg Beaters 1 ripe banana 1 T brown sugar 1/3-1/2 c of soy/rice milk white bread
In a blender or food processor combine everything but bread until smooth and pour into wide bowl or pie plate. Dip bread in Egg Beaters mixture and place in Pam-coated pan.
Sprinkle with brown sugar, powdered sugar or maple syrup. (You could even put sliced banana's and honey over them. Or reduce 2 cups cranberry juice with a couple Tbsp of sugar and soy margarine, I know it doesn't sound good but it is, I've had it over pancakes but not these)
