The fushion bruschetta turned out fabulous. Here is how I made it (there was too much topping so I have adjusted it here for 1 loaf of baguette.)
1 pakage shittake mushrooms (stems removed), finely chopped 1c. dried oriental mushrooms (pour hot water on them and let sit for 15 minutes- drain but save the liquid), finely chopped 1/2 red pepper, chopped 1/2 yellow pepper, chopped 2 bunches scallions (or less), finely chopped garlic to taste, minced 3 splashes soy sauce 3 splashes mirin (chinese cooking wine) 1 splash rice vinegar 2 splashes mushroom soaking liquid or as needed to be as liquidy as you want. In a saucepan add mushrooms and peppers and garlic, cook down. Add scallions and sauces. Meanwhile diagonally slice a baguette, brush with a tiny amount of oil and toast in 400 oven for a few minutes. Top each slice with mushroom mixture when it is cooked as you like.
