I took a regular turkey breast and cut the two meaty parts off and took off the skin. I then pounded them as flat as I could and made a stuffing of: 3 slices garlic batard bread (italian bakery bread with roasted garlic), mushrooms, spinach and herbs. I used the bottom plastic wrap to roll it up and then rolled a lot of foil around it. Make sure the seam is up. I didn't make a sauce and the turkey was nice and moist and fork tender.
The stuffing:
3 slices good bread
1 package baby portobellas
1/2 bag baby spinach
herbs
salt and pepper
take the mushrooms and chop coarsely, put in large pan and start to cook, add salt and pepper, when a little cooked add the spinach and wilt. Put in colander and squeeze out water. Meanwhile chop bread in food processor and add herbs, then add the mushrooms and spinach. Season well and smear along a flattened turkey breast. It took about 1 hour 20 minutes to cook the 2 half breasts. I don't know what they weighed- it was just a regular turkey breast. I cooked the inside to 165 minimum and let sit 10-15 minutes.
