I almost always use egg whites for baking, not eggbeaters. I don't know why, but I think eggbeaters taste funny, so maybe that has something to do with it? I don't know. Hmm. I used Pam with mine, and didn't have an aftertaste, although it did taste very much like a yellow cake to me... not so much a "pumpkin cake" as a yellow cake with pumpkin in it... does that make any sense at all?
