Impossibly Easy Italian Chicken Pie (Makes 6 servings)
Satisfy your pizza cravings! This is so yummy, and it's especially easy if you use a precooked storebought chicken, like Louis Rich.
1/3 cup soy parmesan cheese 1 1/2 cups cut-up cooked chicken 1 cup shredded mozzarella soy cheese, divided (I use Veggie Shreds) 1/2 teaspoon dried oregano leaves 1/2 teaspoon basil leaves 1/2 teaspoon garlic powder 1 (6 ounce) can tomato paste 1 cup reduced fat Bisquick baking mix 1 cup soy milk 1/4 teaspoon pepper 1/2 cup Egg Beaters or 4 egg whites
1. Preheat oven to 400 degrees. 2. Spray 9-inch pie plate with non-stick cooking spray (I forgot this and it was fine!). 3. Sprinkle soy Parmesan Cheese in pie plate. 4. Mix chicken, 1/2 cup mozzarella soy cheese, the oregano, basil, garlic powder and tomato paste; Spoon over soy Parmesan cheese. 5. Stir Bisquick mix, soy milk, pepper and egg whites until blended; pour over chicken mixture. 6. Bake 35 minutes. 7. Sprinkle with remaining mozzarella soy cheese. 8. Bake 5 to 8 minutes or longer or until knife inserted in center comes out clean. 9. Cool 5 minutes.
