traditionally it has a lot more in it, but:
2 cups rice, 2 cups chicken broth pinch of saffron (expensive, and very strong- use just a few strands broken up) garlic (if you can't handle much- don't use at all or use a tiny bit of garlic powder) onion- same as the garlic, I sometimes put half one in, and then don't eat it myself... parsley basil sliced carrots (optional) any other bit size veggie that is safe well cooked, if you need a lot of liquid increase the amount of broth to compensate (peas are yummy.. ) chicken breasts- defrosted 1 per person (if large 1/2 people) fish/shrimp (shelled)- optional, add at end of cooking for time needed to cook it- small pieces only take about 10 minutes
preheat oven to 350 mix all ingredients to carrots in large casserole or roaster with tight lid. place veggies and chicken on top, and cover with lid.
bake for 1 hour, 1.5 if needed to complete cooking of rice and chicken.
Paella is a traditional spanish dish. It's often used as a garbage pail dish and filled with leftovers or just whatever is available.. meats, veggies, etc.. but in this case its a safe simple thing that reheats well as leftovers too!
