Hello again - thought you'd like a few chicken recipes.
RASPBERRY BALSAMIC CHICKEN
veg cooking spray 1/2 c chopped red onion 1-1/2 tsp minced fresh or 1/2 tsp dried thyme 1/2 tsp salt, divided 4 - 4 oz. chicken breasts, boned and skinned 1/2 c seedless raspberry preserves 2 tbsp balsamic vinegar 1/4 tsp black pepper
1. Heat skillet sprayed with cooking spray over med-hi heat until hot. Add onion and saute 5 min. Sprinkle thyme and 1/4 tsp salt over chicken. Add chicken to pan and saute 6 min each side or until done. Remove chicken from pan and keep warm.
2. Reduce heat to med. Add 1/4 tsp salt, preserved, vinegar and pepper to pan, stirring constantly until preserves melt. Spoon sauce over chicken and serve immediately. Serves 4. Ea serving 1 pc chicken and 2 tbsp sauce.
