1 (15 ounce) can pumpkin puree 8 egg whites 1/2 cup olive oil (not EVOO, just regular) 1/2 cup apple sauce 2/3 cup vanilla soymilk 2 cups white sugar 1 cup brown sugar 3 1/2 cups all-purpose flour 2 teaspoons baking soda 2 teaspoons baking powder 1 1/2 teaspoons salt 2 tablespoons pumpkin pie spice Optional: 3/4 chopped pecans or walnuts and 3/4 cup dried cranberries OR 3/4 cup chocolate chips and 1/2 cup chopped walnuts
1. Preheat oven to 350 degrees F. Grease (with cooking spray) and flour three 7x3 inch loaf pans or two 9x5 inch loaf pans. 2. In a large bowl, mix together pumpkin puree, egg whites, oil, apple sauce, soymilk, and sugars until well blended. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice. Stir the dry ingredients into the pumpkin mixture until just blended. Stir in optional ingredients if you have elected to add them. Pour mix into the prepared pans. 3. Bake for about 50 to 70 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.
