Ginger Cardamom Muffins - yummy!

I made these for afternoon tea recently when my family was visiting. They were a hit!

Ginger Cardamom Muffins

Sift and mix:
2C flour
1t baking soda
1c white sugar
2t ground ginger
1t ground cardamom

In separate bowl mix together:

2 heaped T golden/corn syrup
4T apple sce
1T canola oil
4 egg whites
1c low fat soy milk
1/4c chopped currants (optional) - I added them and they were nice.

Add wet ingredients to dry ingredients and mix until damp but not smooth. (don't overmix)

Lightly spray 12 medium muffin pans and bake for 15 minutes or until centres spring back when pressed lightly. Bake at 200C or 390F.

let cool 2-3 minutes in pan before removing and placing on rack.
