vegetable stir fry curry and leftover fried rice

I made this last night. It is basically the spicy spinach I usually make with more veg in it.
Saute some garlic, ginger and 2 small minced Thai chilies without seeds, in a wok
Add 1-2c snow peas (frozen or fresh)
1 package regular mushrooms, quartered
1 red pepper in chunks
Stir fry until cooked mostly
Then add 1 bag spinach, coursely chopped and stir and wilt it. Also add 1/2t red curry paste (it is very hot- do not add more than that- alternatively use a little curry powder). Add some fish and/or soy sauce and some salt too. Add some chopped Thai basil if you can get it.
Add some julienned -shredded bagged carrot right before it is done. Or add carrots earlier and cook. I used the shredded carrot at the end because hub will not eat cooked carrot. But carrot is good in this for color and nutrition.

Serve with hakka ginger chicken
and make extra rice.
The next day take the leftovers and make fried rice. Put cold leftover rice in a wok with 1T oil. Fry about. Add some 5 spice powder and chopped up leftover chicken and ginger. Fry about. Add leftover vegetables and soy sauce. Easy and 2 meals in 1!
