This slightly sweet, very delicious dish will add a new dimension to your tofu repertoire. Serve it alongside a baked potato and a green vegetable for a meal you'll love.
1 lb medium or firm tofu 1/4 cup + 2 tbsp reduced calorie sweet * spicy french dressing 3 tbsp peach jam 3 tbsp very fine chopped onion
Cut tofu in slices 1" thick. Press slices between 2 pans (something heavy to squeeze and drain them)for 1 hr to squeeze water out and compress tofu. Heat oven 350 lighlty spray 6 x 10" shallow pan. Cut pressed tofu into 1" cubes. Place in pan. Combine remaining ingredients and mix well. Spoon over tofu cubes. Bake, uncovered 45 minutes. Place pan under broiler for 2-3 minutes, till crisp.
