4 lbs sweet potatoes 6 medium bananas 1/4 c orange juice 1/2 c brown sugar, divided 1/2 t cinnamon 1/4 t nutmeg, optional dash of rum, optional dash of salt 1/4 c margarine, divided
Cook potatoes in boiling water for 30 to 35 minutes. (quality canned sweet potatoes may be used). Cool. Peel and cut crosswise into 1/4" slices; set aside. Slice bananas into 1/4" slices. Combine with orange juice, 1/4 cup brown sugar, cinnamon, nutmeg, rum and salt in a large bowl, stir well. Add banana slices, tossing to coat. Arrange 1/3 of potatoes in a greased 3-quart casserole. Top with 1/2 bananas. Sprinkle with 1 tablespoon brown sugar. Dot with 2 tablespoons butter. Repeat layers once, ending with potato slices. Sprinkle with remaining 2 tablespoons brown sugar. Dot with remaining 2 tablespoons butter. Bake at 375 for 45 minutes, or until hot and bubbley. Serves 12.
