Tofu Stir Fry with Mandarin Oranges If anything is not "desirable" in here I am sure you can substiute it. 2 tsp olive oil 1pkg (1lb) firm tofu, cubed 1 red onion, sliced 1 red pepper, thin slices 1 green pepper, thin slices 2 medium carrots, sliced 1 cup bean sprouts 1 cup broccoli 1/2 tsp chopped fresh ginger or 1/4 tsp ground 1/4 cup orange juice 1 cup canned mandarin oranges, drained 1/4 tsp salt 1/2 tsp pepper 1 tbsp orange zest
In a wok pr large skillet, heat the oil over high heat. Stir fry tofu till light golden brown. Remove and set aside. Stir fry onion,red & green pepper, carrots, broccoli and ginger 5 minutes. Add sprouts and stri fry 1 minute. Reduce heat to medium and stir in tofu, OJ, sa;t and pepper, cook 2 minutes. Stir in oranges and cook 1 minute. Garnish with zest. Serves 2=4
