Tropical Salad (Creamy Dessert with Pineapple and Orange)

Another one from my SIL. It's pretty safe, but does contain shredded coconut. I didn't have any problems with it. I'm also not positive if dry pudding mix contains dairy or not, so check the labels. This was SO yummy, everyone gobbled it up. Enjoy!

Tropical Salad

1 (20 oz) can chunk pineapple, undrained
1 (11 oz) can mandarin orange segments, drained
1 (3.5 oz) package instant vanilla pudding dry mix
1 (8 oz) container non-dairy whipped topping, thawed (Cool Whip)
1/2 - 3/4 c. sweetened flake coconut

1. Drain pineapple juice into large mixing bowl. (Reserve pineapple)
2. Add dry pudding mix and Cool Whip to juice and mix well
3. Stir pineapple and coconut into mixture.
4. Add orange segments to mixture and stir just until they are evenly dispersed.

**Note from SIL: The pudding /Cool Whip mix much more evenly if they are mixed with only the pineapple juice and the pineapple is added later. Also, I wait until the last step to add the orange segments because they tend to fall apart easily.
