The directions indicate to put it into a mold; although they never tell you to un-mold it, I'm assuming that's why it's called a "mountain". Personally, that's too much work for me - I would just bake this as directed in a casserole dish and serve as-is.
2 cups cooked mashed carrots 1/2 cup Egg Beaters or 4 egg whites, beaten slightly 1/4 cup soy milk 1 tsp sugar 1/2 tsp salt
Combine ingredients and mix thoroughly. Place mixture in greased mold, set in pan of HOT water, and bake in moderate oven (350 degrees) 45 minutes or until a knife inserted in the center comes out clean. Serves 4 to 6.
