I didn't use mirin (I have some now but I didn't at the time) - I used sherry instead. I really liked it as I used to get it at a chinese restaurant. I always wondered how they made it. One thing to be careful of is to drizzle the egg white in very slowly as you stir otherwise you end up with blobs instead of stringy bits.
