Instructional Cookbooks?

Hey all!

Can anybody recommend a good, instructional cookbook? I'm really interested in cooking more, and can follow recipes well, but I want to understand the principles of cooking better. That way I can experiment making recipes IBS-safe ... The last time I experimented with a cookie recipe I got chocolate colored cookies that tasted just like a stick of butter Ick! I'm looking for something that explains what butter does to a recipe when you add it, or beating a mix, or baking vs broiling, etc.

Any help would be great! Thank you!
