Canned pumpkin is VERY soft - cooked, mashed, and pureed until perfectly smooth. Can you get pumpkin at all? If not, can you get sweet potatoes there? If so, sweet potatoes, cooked very well and mashed with nothing added until smooth, would be an acceptable substitute.

The size of the can doesn't matter much, because you use 1 measuring cup-ful. One or two sweet potatoes would make that amount easily.

As far as the margarine goes, don't worry if you can't find soy - any other non-dairy non-butter margarine will work just fine.
