I have been eating seemingly bad lately- spicy fried rice Saturday, turkey chili yesterday and turkey sausage and spahetti today. I am doing just fine tonight. I think a big part is that I grow yellow tomatoes which have far less acid. I just wanted to mention it to those who grow tomatoes or anyone that goes to the farmer's market. I made my sauce yesterday and just buzzed the tomatoes in the food processor like a lazy person this year, so that meant no removing seeds or skin. Anyway I handle it fine. But I suggest yellow tomatoes to us all. I grow Italian Gold paste tomatoes which make awesome sauce, bruschetta and salsa (probably why I can eat these) and I grow Sungold cherry tomatoes which taste the best. Persimmon heirloom tomatoes are to die for!
My summer spaghetti 1 jar my yellow sauce (it is orange when it gets reduced and thick) turkey sausage (casings removed and drain fat and I only ate a couple bites of it) thick cut mushrooms (cremini or portobello) leek or onion chopped small zucchini sliced garlic as much as you can handle, sliced 1 can artichoke hearts fresh oregano and rosemary finely chopped and basil chiffonade (only at end for the basil) salt and pepper, soy parmesan (I cheated and had some regular tonight but only a spoonful ) brown meat, leek or onion and garlic, add zucchini, then mushroom, then artichokes and sauce and herbs. Simmer, add basil last. Not everyone can handle this! but if you are going to make spaghetti I like it this way. With pasta and baggette I was fine. Try gold tomatoes!
