it is generally mixed with other non-wheat flours (like rice and tapioca flour) for people who are allergic to wheat or are Celiac. If you're not, just use a good all purpose wheat (not whole wheat) flour instead. Potato flour alone has no gluten in it, and a product made from just potato flour will be unacceptable, by anyone's standards.
