I used to make everything non-dairy while I was nursing because both my kids had problems. Who knew these recipes would come back as so useful!!! This one has a great "creamy" sauce and is wonderful with rice.
4 chicken breasts 1/2 tsp salt 1/4 tsp pepper 1 tbsp oil 2 C Carrots 1 C sliced onion (I always decrease this significantly) 1 garlic clove 2 pckgs fresh mushrooms 1/4 C flour 1 (14 1/2 oz.) can chicken broth 1 tsp dried thyme
Sprinkle chicken w/ salt and pepper and cook 4 min. on each side and remove. Add oil, carrots, onion, and garlic, cook 2 min. Add mushrooms, cook 5 min. Sprinkle w/ flour, cook 2 min stirring constantly. Add broth, thyme, bring to boil and cook until slightly thick. Return chicken, cover, and simmer 10 min.
