is your friend just celiac or IBS?celiac? if its the former Streits potato starch has a gluten free sponge cake recipe on it thats yummy... mom and Michelle swear by it... Gluten aggravates moms crohns and Michelle is Celiac... but its got a lot of egg yolks, though I imagine you could just use more whites instead.. but then it would be like a gluten free angel food cake with some flavoring (lemon/orange mixed is best)
