2 c. all purpose flour
1 tbsp. baking powder
3 tbsp. Sugar
1 egg
1 c. rice milk (soy should work, haven't tried it)
6 tbsp. apple sauce

Makes 1 dozen muffins

Preheat oven to 400 degrees. Mix first 3 ingredients together in a medium size bowl. Mix last 3 ingredients together in another bowl. Add liquid ingredients to dry. And mix with as few strokes as possible. Line muffin pan with paper liners. Fill liner 3/4 of the way full. Bake for about 20 minutes or until done. *Variations add about 1 cup of frui t or vegetables and 1 teaspoon of spice.

Variation:

Chocolate muffins- replace ½ cup flour with ½ cup cocoa


I used unsweetened applesauce and not natural- its sour and I can taste that in the muffins- next time I'll either use regular applesauce or add an extra tablespoon of sugar to counteract them... but other then not sweet enough they are yummy

One other note- they adhered to the liners a bit too well - lost a lot of muffin that way, so next time I'll probably use non stick spray on them... considering there is 0 fat in the recipe unless its in your rice milk, that isn't bad.
