1/4 Cup grated soy Parmesan Cheese
1 Tbsp olive oil
1 Tbsp dried basil
1/4 tsp garlic powder
4 medium red potatoes
In a bowl (or large zip-lock bag), combine soy parmesan cheese, oil, basil and garlic powder. Peel and cut potatoes into 1/4-inch sticks. Add to cheese mixture; toss to coat. Place in a 15x10x1-inch baking pan coated with nonstick cooking spray. Bake at 425 for 15 minutes; turn potatoes. Bake 15-20 minutes longer or until crisp and tender. Yield: 4 servings
**Note: Instead of baking these, I prefer to toss them onto an ungreased cookie sheet and broil them, turning them every 5 minutes so they don't burn.
