Irritable Bowel Syndrome Message Boards | Heather's Mexican Sauteed Pepitas Prawns

Hi everybody - It's been a long time since I've posted anything and probably a lot of you don't remember me, but here I am again. I had today off and so I cooked one of Heather's recipes as noted in the subject. Boy, were they great--what a flavor.

I found the Pepitas at Trader Joe's and they were already roasted and salted so it saved me some steps. Didn't have any red bell peppers so I used a 4 oz can of diced mild chilis and I didn't have any whole coriander seeds, so I subbed 1/8 tsp ground coriander for the 1/2 tsp whole seeds. The recipe is on page 170 of "Eating for IBS".

The dish had a great flavor except my husband didn't like the consistency with the pepitas ground up in the sauce, but he liked the flavor too. So next time I'll chop them instead of putting them in the blender. I don't have IBS as bad as some of you and the larger pieces don't bother me (much!)

I figure it has about 5-7 points Weight Watchers. We had California Pearl Rice with it so add 2 points per 1/2 cup of rice (made w/out butter) with about 1 tsp salt added to water and done in the microwave. (takes about 15 min to nuke).
