Actually, as far as I know cheese is a terrific training food for dogs. If it's not off your plate, they don't know it's people food, and it's similar in fat and caloric content to training treats. Dogs don't have any problems with it. (Well, there's always a possible exception). I'm so excited for you!
As far as training to sit, put her (it is a her, right?) on her leash. Walk a bit with her on your left. When you want her to sit, say "sit" once firmly, if she doesn't pull straight up on the leash, this will force her into a sitting position. You can also scoop out her hind legs from under her if she's stubborn. When you're ready for her to move, hold out a treat in front of her, and pull it away as you say "OK" she should get up and follow the treat at which time you can praise her and give it to her.
