Stomach Flu - IBS Trigger?

Hi I am a newbie and do have a quick question, please. I have had IBS for a number of years and have had it under control until I recently contracted a stomach virus going around the schools (I am a substitute teacher). It is about a month and I still am having a really hard time.

I do not have the constant diarrhea and cramping anymore but I still am having trouble eating even many of the approved foods. I am on apple sauce, baked chicken cutlets, apple juice, white bread, squash, potatoes, rice, etc. but even with these, things are not back to normal.

Could a stomach virus trigger IBS and if so, how long would it take to get back to normalcy?
