If he or she doesn't want to run the tests, try to find another one that will. It would be a good idea to stay away from all trigger foods including dairy. It can take a day or two before symptoms appear, and it may not be a "bang, it's there" kind of symptom, but it can be one that slowly keeps on making you not feel well. Good luck.
