ok- from my baking lessons..

I know how to make and ice wedding cakes.. anyway- we were told NOT to use these for cakes and other baked goods BECAUSE the way they work is they cycle the temp between 2 temps constantly.. its safe for meats, etc because it never allows them to defrost, but with breads, and cakes they are more temperature sensitive and will stale faster in that environment.
