'Self-defrosting freezers' - don't they make meat go funny?

We have a freezer which my BF's had for a long time before he met me, so we don't have any manuals for it or anything. Every now and again when we get stuff out of it it's not frozen, which has led him to presume it has a 'self-defrosting' feature, which is apparently a feature than better freezers have, so you don't have to do it yourself periodically.

But I'm just curious, how can that be healthy? Like with meat - you read the instructions and it always says once it's been defrosted once don't re-freeze it. Same with other foods. Some bread has come out slightly stale too, even though it was frozen when completely fresh.

Sorry, probably another 'dumb blonde' question...
