I use Clearspring Shoyu, available Sainsbury's, some HFS and organic supermarkets. Ingredients: water, whole soya beans(18%),wholewheat (16%), sea salt, Mikawara Mirin (sweet rice, water, cultured rice). Soya beans and mirin are organically grown.
