Take your soluble fiber. stay hydrated- drink lots of the "auguas". They are mostly water with fruit. Eat lots of tortillas. The corn tortillas are the best there and served with almost everything.They are a really good source of soluble fiber there. Don't be afraid to ask for tortillas with your meal, it's like asking for dinner rolls in America. Be very careful about eating "street food", That is food prepared from a cart. It can be very fatty and the freshness can be questionable. Stay away from lettuce and strawberries, they have the ability to ruin your trip.Most of the places will use cabbage on the tacos and such. The cabbage is good. The seafood is pretty good in that area. DO NOT try to find places that serve "American" food. You are better off eating the local cuisine.
Where in Jalisco will you be staying? What town? If you get the chance, I highly recommend taking a day trip to Guanajuato. It is the oldest city in North America and it is a great place for history. It is like being in an old European village. Jalisco also has some nice shopping opportunities. I almost forgot, STAY AWAY from Menudo! It is extra greasy and made up of almost all trigger foods! No matter what people there say about how wonderful it is, don't give in. It's not worth it.
