I was just "catching up" & had an idea that might be helpful--have you checked out Canada's Food Guide at all?
I know, it sounds very simple, but it looks like you're low in a lot of your food groups. The fats/oils area could be challenging, but perhaps substitute treats in that category.
You could definitely use a few more milk alternative selections and probably fruits/veggies and more grains.

Note: I'm trying to be encouraging and helpful, not critical. I know you're frustration because I'm underweight too. I couldn't believe that technically I wasn't getting enough protein selections until I went to the current site to see what a serving size of meat alternatives was!
