Getting Your Spinach

Kate, I put spinach in my meat loaf. I used to use fresh, but then I saw Rachael Ray (Food Network TV) use defrosted frozen chopped. She demonstrated putting the spinach in a tee-towel and wringing out the moisture so it doesn't "leak" into the pan. It works perfectly, and really enhances the meat loaf. You can find my turkey meat loaf recipe in the Recipe Board, but any meat loaf recipe works. It's a super way of getting spinach without the cramps.
