congrats for taking a break, jaime! i took a break on canadian thanksgiving, too!
re: zucchini--one of my favourite veggies, or shall i say fruits? very very very safe for me and lots of sf!
it's so fast, so easy and well...sometimes all i want is a big plate of broiled or grilled zucchini with herbs, etc.
zucchini hash is cool. scalloped zucchini. zucchini sticks/fingers (similar to french fries) give it any spice or twist you desire! confession: mostly i like it pretty plain, i.e. sea salt/herbs.
just season, cut in funky shapes, and put on a cookie sheet and broil until done/crispy. don't laugh, but sometimes i think it tastes like veggie bacon! I like it really baby/paper thin and usually run it through my food processor for a second or use a mandolin slicer or give it a french fry cut. You could even put a little soy cheese or soy parmesan on it if desired or give it a 'gratin' effect with some crumbs and perhaps a wee bit of an egg white wash.
Great side dish or, uh, entree. Fabulous snack! Not bad with either 'shrooms or spinach and even beets! Even broccoli!
