This is funny. I went on a cruise, last summer, to Alaska. And guess what? THEY SENT ME IBS friendly/safe meals to my room, which I my mother (my roommate) gave guidelines to the kitchen. No joke. And they were wonderful. Simple and wonderful. This was in case I didn't feel "safe" eating elsewhere, but well...I lucked out because there were tons of options and well you can SPECIFY--no this and no that and done this way...Also...make use of the mini-fridges and for peace of mind bring some suitable stuff. They even had gf bread, etc. Make your needs known. And have a blast.
