1. Fried rice from the store/restaurant is probably not a good idea. It's full of oil and probably MSG and who knows what else that are triggers for us. IF you make your own, like the one in Heather's book, it is low enough in fat to make it safe. Rice is a wonderful soothing food for IBS and you can easily incorporate wonderful veggies, a tad of oil, and yummy flavours safely.
I often make my own "fried" rice. Just add a teaspoon of oil to a non-stick pan (trust me - it really is enough), then I saute some minced onions, garlic, add the rice and any other cooked veggy you like (I like carrots and peas), add a BIT of soy sauce (not much) and YUM! It's a great staple and helps me to incorporate veggies.
2. Peanut butter on its own is very high in fat. I buy the light version and have it on toast every morning. It is a wonderful source of protein so as long as you're not eating too much at a time it is usually safe.
3. Exercise will help. IT's not unusual to hit plateaus when losing weight. Try a light stroll around the block or anything else you enjoy - even 10 minutes a day can help.
Also, try having more smaller meals a day instead of 3 large ones. Decrease your portions - it's healthier anyway.
