questions concerning Heather's books

Hi everybody! I have a couple questions about the books. 1)In Eating for IBS (page 17), it talks about vegans being able to substitue "soy foods, beans, and lentils for poultry and seafood". What I need to know is what exactly do you substitute? What product do you use in place of what meat?
2)One of the books mentions vegetable fried rice. Are we allowed to eat fried rice? I thought we were supposed to stay away from anything fried. Do you ask them to make it w/o oil?
3)This really doesn't have to do with the book, but is Peanut Butter IBS safe? I ate some the other day, and started feeling kind of sick. I don't know if it was the p.b. or the bread I used.
4)Also not in the book: I have lost 13 lbs since I started eating for IBS. However, I haven't lost any lately. I want to lose at least 25 more. I'm not overweight at all, I just am not happy where I am. Do ya'll have any suggestions for me on how to start the weight loss cycle again?

I have some fun news. I finally ordered a cheeseless pizza. It is so good. I didn't even really notice that it wasn't there. I've had like three in the past two weeks! (they are the small personal pizza's) One place even made it with pesto instead of tomatoe sauce. I've found that restraunts are very accomidating to vegetarians. Of course I don't tell them that I have a digestive disease and that is why I became a vegan. People are actually pretty impressed by it.

I just completed my first month after my IBS diagnosis. I have not eaten a single animal (including dairy) product, fast food, fried food, or wheat product. I have gotten where I don't feel bad at all asking places to prepare w/o oil. I'm pretty proud of myself. I have lost 13 lbs. My only downfall is that I haven't given up my wine. What can I say, I'm young and date a very social man. I know, I know, no excuses.

I am so sorry this post is so long. I just needed ya'lls advice. I can't tell you what a gigantic blessing all of you have been for me. The day after I was diagnosed, I found this board. I feel so lucky to have ya'll in my corner and to have someone who actually "gets it". Can't wait to hear from ya'll.
