To quote Dr. Dean Ornish (I love this guy!):

Health food stores know to refrigerate them. You'll find it there in the refrigerator, not on the shelves. Why other stores don't refrigerate them, I assume, is because they just don't know any better. I would think customer complaints of rancidity would be a pretty good teacher though.....
