A few questions...

hello everybody!
I'm an IBS sufferer from England but living in Paris (for five years). I have just discovered Heather's fantastic books and website and have already seen an enormous improvement in my symptoms (mainly Diarrhea). I have a few questions to put to the board:
1) In Paris, the fibre supplements that my gastroenterologist has prescribed me contain sterculia. I have tried a psyllium based supplement but found that it provoked attacks. Does anyone else use this supplement (called Normacol and another Poly-Karaya) and if so, did they find it succesful? Is it a soluble fibre supplement? And on a general basis, should supplements be taken before, during or after a meal?
2) I can't find angel cake mix here. I did find a muffin mix but it did contain some egg and fat. I guess that is not a good idea right? Is there any alternative? Particularly, is there any safe things, apart from french baguette that I could eat from these fantastic bakeries they have here?
3) When looking at food labels, what ratio,carbohydrate to fat should I be looking for?
4) I have heard that low residue diets should only be followed on a short term basis. Is this diet therefore safe to follow for ever?
5) Finally (for now!), is candida likely to be a long term problem when followng this diet?

Sorry for so many questions but I have been noting them down over the last few days whilst reading the books.
