It uses potato flakes as levening instead of yeast (which I'm allergic to) and they have both white and whole wheat (although you really can't tell much of a difference). I don't think it has a whole lot of preservatives in it, but I can't tell you for sure right now - the loaf that I have doesn't have an ingredient sticker on it - when hubby picked them up they were just putting them out and hadn't labeled them yet and he got them anyway.
